Pinecone Bakeshop + Cafe is a 1,528-square-foot neighborhood bakery in Alhambra, designed around the culinary philosophy of chef and founder Joyce Hsieh. Her commitment to seasonal, heirloom ingredients prepared with deep intentionality set the tone for every design decision.The original space, a dark and narrow former pizzeria tucked behind a brick arcade, had little connection to the street and no natural light. ORA’s design transformed the space into a bright, nature-infused interior where the craft of baking is always visible, and materials mirror the authenticity of Pinecone’s products.

Exposing the original brick walls and adding skylights of the existing building opened the narrow space to natural light. A new post-and-beam system below the exposed roof rafters was stained green to mimic an exterior trellis, blurring the boundary between indoors and out.

An artisanal bakery demands opposing microclimates: cold spaces for precise dough mixing and hot zones for continuous baking. Separating the two became a design opportunity. A viewing window into the mixing room offers customers a glimpse into the baking process, framed in reclaimed pine and softened by a custom canvas awning inspired by utilitarian camping tents and the traditional Japanese noren. The canvas diffuses light into the cafe, casting a warm glow over the work behind the glass.

The shop takes its name from Joyce's late grandfather, whose name carries the character 松, or pine. That connection also runs through ORA’s design in the choice of materials. In partnership with Angel City Lumber, six tons of Aleppo pine salvaged from fallen Los Angeles street trees were custom-milled into the siding that lines the interior. The reclaimed material sequesters 10 metric tons of carbon directly within the architecture, and expresses the same commitment to local and sustainable sourcing that defines the bakeshop’s menu.

Upgraded roof insulation, automated lighting, and a backup generator deliver energy efficiency and climate resilience throughout. For ORA, high-performance sustainability is a baseline. These hidden efficiencies support the bakery's demanding operational needs while keeping the environmental footprint in step with the chef's own standards for sustainable sourcing.
